So I recently went about making kimchi. Of course I wrote out the recipe, but I haven't put it into MyNetDiary, yet. The reason is because kimchi is a fermented food. I know fermenting can change nutrient profiles, sometimes drastically. So my question is this...

Is there a way to enter fermented recipes into MyNetDiary to ensure an accurate nutritional profile?

No I get that. I'm just wondering if there are profiles for fermentation specifically, or if there's a way to calculate nutritional changes so if I make a recipe for my kimchi, the nutritional profile is accurate.


Hi NateHevens- That is great you are making your own kimchi! I enjoy it in small amounts myself. Yes, you are correct in that certain fermenting techniques can result in increased b vitamins, specifically folate, b12, riboflavin as well as increased antioxidants as a result of the bacteria, in the final product. Though, unless you are doing your own analysis, it is difficult to know how much of each of those b vitamins are in 1 serving of final product. Are you currently deficient in these nutrients? Is that your concern?
If you do know the amount of b vitamins in a serving of kimchi then consider creating a custom food. Go to the Plan section, then meal section and click the drop down menu under custom food (on the website). If you know the % DV you can enter this in (though this may be very difficult). Another option is to use the nutrition facts from a packaged kimchi. Not as accurate, but it may be better than nothing. Hope this helps! Joanna (Dietician)
