Ideas for seasoning grilled chicken Topic

Kathty, I appreciate the links you provided.

Sbelle, what a great idea about creating 3 sections for your baked chicken.

Hi Norah- I really like the website yummly.com for recipes on just about anything. Recently I have been marinated my chicken breasts for about 1-2 hours before cooking. For 8 oz of chicken I'd use the following for a marinade:
2 garlic cloves + 1 T fresh minced ginger + 1 T olive oil + 2 tsp orange juice + 1 T tamari. I mix this on the chicken and then place it in the refrig for to marinade for 2 hours. I then cook it on the grill. Yummy!

They have great recipes ! I stuff my breast with fresh spinach ,tomatoes and olives ! Then dredge in yogurt ! Then whole whet Panko!! Bake in oven ! So moist !!

DDT, thanks so much for that recipe. My grocery store doesn't stock whole wheat panko, only the plain or seasoned kind (with way too much sodium). I will look for whole wheat panko now in other stores. Kikkoman has a lower sodium whole wheat panko that I'll look for: http://www.kikkomanusa.com/homecooks/products/products_hc_details.php?pf=11304

Also, I didn't think to dredge in yogurt. What a great idea. What type of yogurt do you use - plain or greek style? Nonfat or ?

Best,
kathy

I like to marinade my chicken before grilling in Mojo (a citrus marinade). Fresh Mojo is great, but you also can pick up a bottle in the Goya section of the supermarket.

- "Quick asian bbq sauce" (i basically add soy sauce and sesame oil and ginger to regular bbq sauce).

- Not direct grilling, but I still use the grill for this. Works for both chicken and fish: Brush/smother the fillet with ginger paste (i get store bought refrigerated ginger paste in a tube, which has some sweet to it), put it in aluminum foil, add thyme, olive oil, butter, onions, salt and pepper, and wrap it up, throw it on the grill. The onions caramelize and it makes a nice broth.

In the recipe with the aluminum foil wrap, I forgot to mention an ingredient, being: juice from a quarter of lemon and some lemon slices.

Fresh minced garlic, salt and a sprinkle of oregano, a little olive oil and let them marinate overnight

1/4 -1/2 tsp each of garlic powder, onion powder, cayenne, cumin. 1teaspoon each of paprika, salt, sugar. 2 teaspoon of chilli powder and 1 chicken stock cube.
That's enough for at least 2 chicken breasts to make homemade fajitas.

2 chicken breasts diced serves me, the wife and 2 small kids. Instead of wraps I use gem lettuce leaves. Stir fry onion and yellow/red peppers with the chicken and the spices. guacamole and some Creme freche go nicely with it in the lettuce. The chicken and spices if served between 3 people, minus the onion and peppers works out about 134 cals each. Loads of room to add tasty things that you like.
