Low Carb Lunch Ideas While on the Road Topic


My husband works on the road sometimes up to 14 hours a day. There are times I go with him and would love some lunch ideas. I have been eating salads but that is getting old. I know I can take slides of turkey, etc but I'd like something more savory.


Hi Nyokie66, Here are some ideas for long workdays on the road:
1. Bring a cooler and pack it with snacks and food. This will help avoid the problem of living on fast food because it is convenient. You can pack it with fruit, cut up veggies, cottage cheese, low carb Greek yogurt, cheese sticks, and whatever else appeals to you.

A preportioned 1 oz serving of nuts or seeds is also very satisfying as a snack.

Canned or tinned sardines, oysters, etc. works well.
Hard boilled eggs hold well in coolers.
Raw or cooked non-starchy veggies hold well in coolers.

For those of you who don't follow low carb: I always bring whole grain crackers as well - my favorites are Hint of Salt Wheat Thins or Way Better Crackers Salt & Pepper. If I am traveling near a Whole Foods, I'll stop and buy some cold pasta salads that also have protein in them. Oh, and bring extra utensils and knapkins.

2. You could replace one meal with a low carb high protein shake. Aim for one that contains about 300 kcal and about 20 grams of protein or so. Bring straws - less messy. You can keep in the cooler.

3. Try to get more exercise despite the driving. Use a device to track steps and try to get out of the car as much as possible. When you have a break, get out of the car and try to walk, even if it is just up and down a block or so.
