Need new meal ideas! Topic


My man and I just started eating healthy and working out. I'm in desperate need of some meal ideas! So far we really like these dinners...

Pizzadillas (low carb tortillas)
Grilled chicken, potatoes, and salads
Grilled chicken salads
Teriyaki chicken, brown rice, veggie bowls
Ground turkey hot dishes
Chicken fajitas or tacos

And other meal ideas preferably lower in carbs is appreciated! Thanks in advance


Hi! Here are some options you can combine (that I love)!

- white fish (such as tilapia, or panga) in tinfoil with a little bit of olive oil so it won't stick to the foil. + slice of lemon + cherrie tomatoes (in 200 'C oven for 15 min)
- grilled chicken in grillpan with garlic + lemon
- any green veggies (broccoli, green beans, spinach) = good. I love to cook it real short so it's still crunchy and then stirfry it with some olive oil and garlic
- my favorite greens are a combination of: sliced leeks (1 leek), fresh spinach (as much as you want) and some frozen peas. Start with some olive oil, then the leeks, then the spinach and then the frozen peas untill they're soft. + salt and pepper
- for lunch I usually make a scrambled eggs (1 egg) with some fried veggies (onion, garlic, spinach/courgette, cherrietomatoes is my favorite).
- also sweet patatoes in the oven with some olive oil and herbs (rosemary + salt for instance) is really nice!

My favorite fast dinner:
Salmon fillet (bake 20 min at 400F or 15 min 450F)
Stir-fried baby spinach (I use toasted sesame oil)
Tossed garden salad with OPA light blue cheese dressing (fabulous - just noticed it at my grocers).
Small sweet potato (microwave for 5-10 min while oven preheats, then put on same pan as salmon and finish baking in oven).

Check out the book Skinny Suppers, it has a lot of creative ideas. One recipe is for Asparagus Fries, you can make them and grill an extra lean burger, veggie burger, or ground chicken burger, and use a green leaf lettuce as your bun or regular a whole grain bun.

There is also a tasty chicken recipe for Caribbean Jerk Chicken with Mango Salsa.

Use herbs and (spices like Cayenne Pepper, Red Pepper Flakes, Parsley, Mint Flakes, Thyme, Basil just to name a few.) Add them to chicken breasts and toss in some colorful bell peppers, onion, a dash of Olive Oil and use things like unsalted chicken broth. You really can't go wrong on these, you could even toss in some onion and pineapple with a small amount of Olive Oil to sauté chicken and then add the pineapple and even green beans! Just think outside the box any little tweaks to everyday easy meals with keep from the ho hum here we go agains.

I try to keep breads to a bare minimum but it's my weakness... The lettuce leaves are just as good when you keep your eyes on the goal you have.

Another idea, peaches with chicken and a whole grain rice.

When you buy any canned beans (look for no added salt or at least low sodium.)

I make this Chili all the time because my kids love it, you might as well.

Avocado Chili
1 pound lean ground beef 96 percent lean
1 Cup Chopped red onion
2 heaping tablespoons chili powder
2 heaping tablespoons of minced garlic
2 tablespoons of parsley or cilantro ( I prefer to use parsley and then add fresh cilantro to mine when I eat it.)
1 Teaspoon or more of red pepper flakes
2 cans of 15 ounce size of the following beans
Lentils
Black beans
Pinto beans
Red kidney beans
White kidney beans
6 medium zucchini
8 cups of low sodium Red Bell Pepper Tomato Soup
And Avocado for garnishing
This makes a large amount so freeze half or cut recipe in half.

Thanks for mentioning yummy.com. I am a very picky eater (I eat like a kid and I have no patience for preparation) and am having a hard time finding things to eat.

I've just spent an hour perusing the site and have come up so much. I love that you can list ingredients to exclude, you can filter by time it takes to prepare, amount of fat, carbs, etc. This is a great site.
