I love to make pancakes for the kids. Coleman has a great propane camp stove that has a griddle attachment or you can use an iron skillet over the open fire. You can buy a shake and pour pancake mix and some chicken or turkey sausages. Breakfast outdoors is the best thing about camping. I love my coffee and use a French press for camping with really good ground coffee. All you have to do is boil the water. Take a good cooler with lots of fresh fruit and veggies for snacking. If there is local seafood, cook some of that over the fire for dinner. We are going camping too but to a family camp where they do the cooking. Hope that it won't be like prison food!

Thank you. I have bought this cast iron cooking grate that adjust . Have gotten a small propane bburner to boil water. I am so glad you suggested the pancakes as our 8 yo granddaughter is coming with us so that is something she should enjoy .I am hoping our other 3 that live on martha's vineyard will be able to spend time too. Hope to come up with meals they will like. thought things in foil they could pick what to put in it. We will be at the ocean and hope to do some deep sea fishing so will have access to sea food. Did get a grill basket so I can just turm that with the sea food in it. I appreciate your suggestions- Thank you-Fran

Wow - that is a challenge if you pretty much need to cook fresh everyday. I would do 1-pot meals too if it isn't too hot. Love to cook fish/meat/poultry and veggies over the grill - I could do that for days on end. The cooked starches get messy. You could do aluminum foil baked potatoes, canned beans, etc.
I would probably have a few dehydrated packaged meals for back up just in case you need them. You can find them in any camping store.
I like the septic packages of milk and soy milk so I don't have to worry about refrigeration. If you need it cold, then you could always buy ice and stick in a cooler. Still, those packages are much easier than regular milk containers.
Canned skim evaporated milk works well for cooking oatmeal and also doesn't need refrigeration.
Foil pack tuna or salmon can be added to just about any rice or pasta pot to add protein (again, a good back up in case fishing fails).
Sounds like fun!
Oh - just found this link - looks helpful: http://blog.gaiam.com/blog/rethinking-campfire-food-15-healthy-easy-ideas-2-recipes/

Thank you kathy. Great site. I am looking forward to a new adventure. have too remember the kites as the ocean is such a great place to fly. hope to go to block island one day while we are camping. So many things i would not have done 140 pounds heavier. we will take quick trips to the store daily as we are not in remote areas so that should make it easiers. Did buy Jiffy pop today. I didn't think they still made it. The kids should love it. Food scale coming too! To try to live and maintain but not jepardize!
