Red Lentil Soup With Lemon (modified from NYT recipe) Topic


Hi Folks:
Since so many of my friends were raving about this soup, I decided to make it last night. It was delicious. And I am usually not a fan of lentils. Here's the original recipe:

Since I live at altitude, I tend to add more broth/water and simmer longer than what most recipes call for. You can see my version if you click my nickname (web program). I forgot to weigh and measure the recipe once it was done, so my yield is an estimate right now. My recipe is named "KAI Red Lentil Soup With Lemon (modified NYT recipe)." I made this soup this week and love the recipe. Very flavorful and the lentils help fill you up. I entered the recipe in the recipe calculator and found that 2 cups equals about 200 calories (I used Vegetable broth instead of Chicken broth). That's pretty good for lunch, along with my "go-to" of Wasa Crackers and Laughing Cow cheese. Flavor is key in helping me stay on track and not get bored with typical diet foods.

Another favorite website I pull recipes from is www.pickyeaterblog.com. The author takes favorite recipes from different cultures (Indian, Italian, Mexican, etc.) and remakes them into healthy versions. And she includes the nutritional info. Everything I've made off her website, so far, has been really good.
