Heat a large non-stick skillet over medium-high heat.
Brush chicken with oil. Sprinkle with curry, salt and pepper.
Place chicken in heated pan. Cook until browned with internal temperature of 165F.
Transfer chicken to serving platter and sprinkle with cilantro leaves.
