  • Preheat the oven to 425F.
  • Spread broccoli, cauliflower, and carrots evenly on a baking sheet.
  • Drizzle olive oil over vegetables.
  • Sprinkle Italian herb mix over vegetables, and coat evenly.
  • Bake in oven for 10 minutes. Stir vegetables and bake for another 10 minutes or until the vegetables are tender.
  • Sprinkle with Parmesan cheese and divide evenly between 6 servings.
