  • Place 2 cups of lettuce in a large bowl or on a plate. Slice or grate radish. Add radish, carrot, cucumber, and cherry tomatoes to lettuce.
  • Use the dressing of your choice but be sure to log it since dressing is not included in this analysis.

You can use any type of lettuce you prefer.

Any type of tomato is fine to use. If fresh tomato is too expensive or not available, then consider substituting with 2 tbsp of chopped red cabbage - it has nearly the same amount of Vitamin C.

Try different types of radish from your local Farmers Market - they typically have more flavor than store-bought radish.
