Combine paprika, Italian seasoning, garlic powder, and pepper in small bowl.
Place spice blend in a resealable food storage bag. Add shrimp, seal bag and shake to coat.
Slice onion and cut tomatoes in half.
Pour 1 Tbsp olive oil or extra virgin olive oil into skillet; heat over medium-high heat. Add shrimp and cook, turning occasionally, 4 minutes or until shrimp are pink and opaque. Remove shrimp from skillet.
Add onion and tomatoes; cook, stirring occasionally, 1 minute or until tomatoes are hot and onion is slightly wilted. Add shrimp back to skillet and toss together.
