A delicious chicken salad that makes excellent use of leftover chicken.
8 ingredients
6 oz Chicken breast baked boneless skinless
6 olives Olives kalamata pitted
2 tbsp chopped Onions red raw
10 cherry tomato Tomatoes cherry raw
2 tbsp Salad dressing italian
4 leaf outer Lettuce romaine raw
5 steps
- Cut the chicken into cubes and place in a medium-sized bowl.
- Cut olives in half and chop the artichoke hearts. Mix both with the chicken.
- Finely dice the red onion and cut the cherry tomatoes in half. Add to the chicken mixture.
- Add the Italian dressing and feta cheese to the mixture and toss well.
- Place two lettuce leaves on each plate. Serve the chicken salad wrapped inside the lettuce leaves.

Tips:
This recipe uses leftover baked chicken as the base ingredient. You can use grilled chicken if desired.
If you prefer, you can serve the chicken salad on crackers or wrap of your choice. Make sure to include the extra food items when tracking.
You can use 1/4 teaspoon onion powder in place of the red onion.
