1/4 cup Oats steel cut dry uncooked
4 sprays, about 1/3 second each spray Vegetable cooking spray oil
1 cup, pieces or slices Mushrooms white raw
1 large egg Egg whole raw
1 tsp Olive or extra virgin olive oil
2 tbsp Parmesan cheese grated

- Mix oats, salt, and water in a bowl. Cook in microwave, according to package directions, about 7 to 10 minutes.
- Coat a medium skillet with cooking spray. Over medium-high heat, add mushrooms and saute until mushrooms are soft, about 4 minutes.
- Move mushrooms to the side of the skillet. Crack egg onto the center of skillet and cook until set.
- Mix in olive oil, pepper, and Parmesan cheese with the cooked oats. Transfer to a serving bowl.
- Top the oats with mushrooms, egg, and spinach. The spinach will slightly wilt with the heat of the oats.

Cook oats on the stovetop if you prefer.
