Pulse macadamia nuts in a blender until finely chopped.
Mix eggs, oil, nuts and vanilla extract in a bowl.
Heat a nonstick skillet to medium heat.
Drop spoonfuls of batter onto skillet.
Flip batter when browned on one side (about 2 minutes)
Cook another minute or so until browned on the other side.
