  • Pulse macadamia nuts in a blender until finely chopped.
  • Mix eggs, oil, nuts and vanilla extract in a bowl.
  • Heat a nonstick skillet to medium heat.
  • Drop spoonfuls of batter onto skillet.
  • Flip batter when browned on one side (about 2 minutes)
  • Cook another minute or so until browned on the other side.
