Cut peeled cucumber in half lengthwise and scoop out the seeds by running a tsp or small spoon over the seeds. Leave some flesh in the cucumber.
Cut each cucumber half into 3 even sections.
Spread 1 Tbsp of hummus into each boat.
Roll deli meat and press into each boat. Use 1/2 oz of deli meat in each boat.
Sprinkle grated carrots evenly over each boat.
Serve chilled.
