4 cup Milk low fat 1% milkfat
1/2 cup, halves Apricots dried
1 1/2 cup Oatmeal or rolled oats regular or quick dry uncooked
4 tablespoon Oat bran dry uncooked

- Heat milk in a saucepan on medium for about 3-4 minutes so that it just simmers. Watch saucepan carefully as the milk can easily bubble over and make a mess.
- While milk is heating, quickly dice the apricots.
- Stir in uncooked rolled oats, oat bran, and apricots.
- Simmer oatmeal mixture for about 5 minutes, stirring occasionally. The texture should be very creamy vs. dry and sticky. Add more water if it feels too dry to you.
- Remove from heat and add nutmeg. Cover and let sit for 2-3 minutes.
- Divide evenly between 4 bowls.
Tips:
You can preheat the bowls in microwave by heating on medium for about 30 seconds. This will help prevent the oatmeal from cooling too quickly after serving.
Dried apricot gives this oatmeal a sweet flavor, as does the milk. If you want it sweeter but need to control carbs, then consider trying a brown sugar baking blend, non-caloric sweetener, or sugar-free maple syrup.
Do not leave the milk unattended while it is heating. The milk can quickly scald or boil over, especially if you use a cover on your pot to speed up heating.
