Pre-heat the oven to 350F.
Slice the zucchini into thin slices. Pat dry.
Line a baking sheet with parchment paper. Place the zucchini slices on the sheet and sprinkle with salt and paprika.
Lightly spray the zucchini with the cooking spray.
Place in the oven and bake for 1 1/2 to 2 hours or until crispy.
Remove from oven and serve immediately.
