1 cup cherry tomatoes Tomatoes cherry raw
8 cup shredded Lettuce green leaf raw
5 1/2 oz Tuna light canned in oil
2 tablespoon Olive or extra virgin olive oil
2 tbsp Vinegar white distilled

- Snip ends off green beans and blanch* them. Cut tomatoes in half.
- Place lettuce, green beans, tuna and tomatoes in large bowl.
- To make dressing, whisk oil, vinegar, mustard, and pepper in small bowl until blended. Pour dressing over salad; toss well. Serve immediately.

* How to blanch green beans: Heat 2 quarts water to boiling. Boil green beans for about 4 minutes. Then immerse in ice water for 2 additional minutes. Drain.
