Vegetarian Recipes Topic


Hello new friends!
Although I am not necessarily trying to lose weight, I do want to eat healthier than I would normally. I'm the kinda girl that normally can polish a whole Domino's medium pizza off, so believe me when I say I need some help! I wanted to see if any of you had any good meatless/healthy favorites! I'm a vegetarian of 8 years! I don't eat any animal products.

Hi Kat,
I love getting creative in the kitchen with vegetarian cooking. Way to go on your plant based lifestyle! Here's a days worth of some of my favorite recipes:

B: Berry Blast Smoothie: 1 scoop of whey protein powder + ½ C 1% milk or cashew milk + 1 C frozen berries + 1/2 C kale. Blend together till smooth. You can also add chia seeds and walnuts as well.
L: Black bean/Avocado Tostadas: 2-3 small toasted corn tortillas + 1/3 C black beans + 1/3 avocado sliced. Top with lettuce + 2 T tomato salsa.
snack: 2 medium carrots dipped in 4 T hummus
D: Stuffed Pepper: Mix together: ½ C cooked quinoa + ½ C cooked and drained spinach + 2 T parmesan cheese + ¼ c soy crumbles. Stuff inside cooked bellpepper, bake in oven until warm.
