Grilled Tilapia fish tacos at our house! Way too hot to cook anything inside. I DID discover a new way to do corn tortillas for tacos this summer: lightly spray both sides with cooking spray (stack them up for as many as you need to do), then grill 1-2 min per side on a hot grill. They get some color, firm up and have the best chewy texture!
I’ll try the fajitas once things cool down enough to turn on my stovetop. Supposed to be 109 this weekend - ugh.

Hi Drinkmorewater- Fish tacos sounds great! How do you prepare the tilapia? Do you marinade it? Do you grill it then in foil?
I forgot about fish tacos ! And the tip on the tortillas sounds like a winner- Stay cool. Joanna

In my old (heavier life), I would have done a lot of prep on any dinner. Now I do much less work and like my food just as much!
I spray both sides of the fish with cooking spray, if we are doing tacos I just use taco seasoning to give it flavor. If the grill is preheated well I don’t have issues with sticking if I am gentle when I flip the fish.
The Rubios sauce is an equal mix of mayo and plain yogurt (we use nonfat Greek yogurt) and a little goes a long way!

Yes- simple can certainly make life easier and leave more time for things like being active! I will have to make some fish tacos here soon. Thanks for the inspiration~ Joanna
