I think I'm going the salad route tonight. Quick and easy.

Last night I wasn't very hungry. Husband had leftovers. I had some hummus, carrots, and my home made yogurt with home made apple jam and raisins mixed in.


3 bean vegetarian chili. We make it all the time, it's delicious! Great source of fiber, protein, low carb, low glycemic, and low fat with no sat fat. Recipe from Diabetic Living.


Jahesna, that sounds great! I love chili - vegetarian or otherwise. Tonight I'm having leftover beef barley and leek stew and salad.


Red Lentil Soup for dinner tonight + 1 low cal beer (~100 kcal) + salad + cottage cheese.


Tonight: baked chicken with onions and mushrooms in a light cream of mushroom sauce. Stir-fried spinach and salad.

Tonight I cooked orange trout, lightly breaded with organic corn meal, shrimp with garlic , lemongrass strips butter and EVOO. I also had brown country blend rice, great Northern beans and unsweetened tea.


Hi MissAngie, what do you add to the cornmeal as the trout breading? What helps it stick to the fish? A trick I learned was to use a small amount of honey & mustard for a different flavor profile.


Lentil and ham soup--from the crock pot, with a salad and Bolthouse yogurt cilantro and avacado dressing. The lentil soup has carrots, celery, and onion in it,...along with some seasonings and dried herbs. This is a new recipe for me and I hope it is tasty.


Tonight is an easy supper. I'm boiling a boneless, skinless breast. When it cools, I'm slicing it into pieces to put on whole wheat bread, with a little light mayo, a real thick slice of tomato, and lots of spinach leaves toping it off before the other piece of whole wheat bread. It's a real tasty sandwich and I feel it's better than using chicken or turkey cold cuts from a store. They are just so salty to me. If I want anymore food, I'll eat half of a hass avocado. What's everyone else having?
