What's for dinner at your place?? Topic


The White Bean Fennel Soup was delcious! Yes, the recipe uses fresh fennel but I think you could sub with fennel seed if you can tolerate that. I had it again for dinner tonight. I also had a veggie omelet (1 XL egg + 1/3 cup egg whites) too. XC skiing and walking in this cold snowy weather increases my appetite!

I think I'll go for a glass of wine + blueberries for dessert tonight. :)


Not sure what exactly is for dinner tonight. Last night we nixed the salad and had a platter of different cheeses, sausage, olives, garlic and crackers.

Tonight might either be the salad or we might make goose pot pie.


Goose pot pie? Wow. I wouldn't even know where to buy goose where I live! At my place, leftover split pea soup, Brussels sprouts, salad, and 1 glass of Cabernet. Later, I'll have 1 oz (1/4 cup) of honey roasted peanuts for dessert.

Update from last night - having the Cabernet in the late evening for "dessert" was a terrible idea. It made me feel incredibly hungry and I ended up eating more food than I intended. Lesson learned. If I drink I usually have a 150 ml glass of wine with dinner.


Kathy, we didn't either! We were looking for duck and I came across the goose. It was good but I don't think we'd buy it again. Very greasy and not a lot of meat on it. The pie came out awesome though. We have a really good recipe that we've tweaked over the years and make all sorts of pot pies with it. Last night I broke down and had a couple glasses of wine. Baby steps! Consumption is a lot lower than it was. Tonight I'll indulge since it's Friday. Dinner wise? Not sure yet. Going out to eat (hence the indulging in the wine). Thinking of something on the light side.


I love pot pies - something about them reminds me of childhood. I haven't had a homemade pot pie in years. I never made them myself though - kind of waited to have them as special treat by others.

Anyway, I am into soup and stew this winter. I have another great recipe to share! Cooking Light's Beef & Barley Soup is delicious. They use leeks which add a wonderful flavor. I do the sautéing as they recommend but then I put everything in a slow cooker for hours. For me, whole grains and legumes (dried beans/peas) are much more digestible and not as gassy when I slow cook them for hours.

FYI: If I don't have leftover wine, I just omit it completely and the soup is still great.

Sorry to have been MIA -- been EXTREMELY busy prepping for Chinese New Year. We'll have our big banquet tonight for my family, and I've been doing the bulk of the cooking ... oh, my, how I wish I'd been saving calories or doing a few marathons to run off the extra calories I'll eat tonight!

Tonight's menu includes:
- Fried rice (thank goodness, my sister volunteered to make this -- one less thing for me to have to do. Plus, I hate to admit it, but she makes better fried rice than I do. Mine always turns out gummy, even though we follow the SAME recipe.)
- Spring rolls with homemade wonton wrappers, and I'm trying rice paper wrappers, too.
- Beef lo mein from scratch (takes a marinade, a brown sauce and a noodle sauce, and it is NOT calorie friendly!)
- Moo goo gai pan from scratch
- For my DH and my DD, that awful so-not-authentic batter-fried sweet and sour pork with that awful sugar syrup sweet and sour sauce. I'll have to make more sweet and sour sauce tonight, and I think I'm out of ginger. O_o
- Fortune cookies (yeah, I know, they were invented in San Francisco, but everybody expects them.)

I. Am. Tired. I know why Chinese chefs are so quick with their knife skills -- in sheer self defense from all that veggie prepping. And we won't even get me started on rolling out wonton wrappers.

I'm a bad Chinese mommy, and I'm not making potstickers or dumplings tonight, but I have to make everything from scratch to avoid corn, and I just didn't feel like making extra dumpling wrappers when everyone likes the spring rolls better. Hey, I have fifteen more days ... I can do some potstickers for the Lantern Festival Night, right?

You are amazing, K8sMom2002. I smiled when I saw, "I'm a bad Chinese mommy." Ha - after reading your posts here I know that you are a FANTASTIC mom and a wonderful home chef! Enjoy your feast.

I over-indulged at Superbowl Sunday but my oh my was it worth it! Today, dinner is very simple. The leftover beef barley soup from Friday with 1 small slice of whole wheat sourdough bread, and a garden salad.

Many thanks, Kathy! We finally got supper on the table at 8 pm last night ... I must get better at organizing this meal!

Barley soup sounds yum! It's threatening snow here, but maybe it's going to blow on past.

Tonight I'm going for easy. I have a pre-made pizza crust, and I'm topping it with jarred sauce, pepperoni, mozzarella and whatever chopped veggies I have left from last night that we didn't use.


Hi folks! I was offline yesterday. Pizza sounds good - I also use a ton of veggies, whatever is in the frig, including topping with sliced tomatoes if I have any. Also, if eggplant is on sale, I peel it, and broil it (no salt, no oil), and add to pizza just before adding cheese. Adds a great taste and texture - very filling.

Last night I had an easy meal of fish, broccoli, salad, and 150 ml wine.

Tonight, I'm on my own so it will likely be leftover AWESOME lentil soup + salad. Probably no wine.


Tonight was fried chicken tenders ... A couple of small ones. I filled the rest of my plate with butter beans, cabbage and carrots.
