Justjennie, how'd your millet salad turn out? Care to share your recipe?

Dietitian, I've never had lamb, but I love figs. I'm blessed to have a prolific fig tree ... Love it when they're ripe!

Tonight is barley risotto with carrots, onions and mushrooms (and garlic of course!) and cabbage.


Traditional New Year's fare for us tonight: black-eyed peas, rice, turnip greens and sweet potatoes. I'll make a "pone" of socca bread and whip up some banana ice cream to go with the brownies my DD made last night.


Tonight was homemade potato soup ... Think a slimmer Zuppa Toscana. Yum!


Homemade Chinese tonight ... I made a beef and broccoli that was light on the beef and heavy on broccoli, red pepper, onions, mushrooms, garlic and snow peas. Yum!

I also burned 330 calories working in the yard -- just enough to enjoy the chocolate mousse my DD and I made with chocolate chips and silken tofu. Double yum! Easiest mousse I ever made, and the best tasting.


Last night was pasta and jarred sauce ... I did at least pick one with a lower sugar amount. And I added more veggies--a whole bell pepper, about a quarter of an onion diced small and a half dozen mushrooms sliced.

Tonight will be my copy cat Chipotle burrito bowl.


Beef & broccoli sounds great! Tonight we had tofu & veggies with a new brown rice & chia product that a family member gave me to try. It was pretty darn good!


How do you do your tofu? I'm just getting brave enough to try soy foods. The silken tofu chocolate mousse was great, but no one could mistake it for healthy. :) I'm hoping to incorporate tofu in place of meat.


I took Cooking Light's Tofu Fried Rice http://www.myrecipes.com/recipe/tofu-fried-rice-10000000689956/ and literally added a ton of veggies I wanted to use up from frig. Works great with nearly any type. Seeds of Change brown & red rice with chia & kale (http://www.amazon.com/Seeds-Change-Brown-Ounce-Count/dp/B00QPEVXUQ ) was added instead of white rice. It was delicious.

Tofu isn't my favorite protein, but with spicy flavorings (see recipe), it's pretty good. I can't stand plain tofu on salads.


Hmmm ... Maybe I'll try it. Tonight I was glad to have leftovers from my burrito bowl ... I'm sick with a cold, and it was so nice not to have to cook.


DdWatford, you asked about low calorie desserts besides fruit. What sort of taste or texture are you missing? I'm suspecting that it's either creamy or crunchy.
