What's for dinner at your place?? Topic


Tonight is leftover Indian food: Saag paneer, and a small portion of lamb, and my own brown rice or 1 small piece of Roti (vs. the refined grain naan). I'll add a salad to the meal too.


We had Sunni Anderson's Lettuce wraps (recipe from Food Network). I omitted the peanuts but added green bell pepper and lime juice. Very yummy and low carb to boot!

Tonight, a friend's birthday dinner at a Sushi restaurant. I'm not a huge fan of sushi but they have some smoked trout sushi on the menu I'll try (I live in CO). I'll avoid the tempura rolls given the deep-fat fried fish adds more calories and who knows what type of frying oil. Or, I might try a teriyaki dish instead. No matter what I get, the sodium will be high but I can live with that.


I'm not sure of the lean/fat ratio of my ground beef as we buy it by the cow. That is to say, my family and another purchase an entire cow and have it butchered. We fill a chest freezer every couple of years. It is pretty lean compared to what I have used from the grocery. We always run out ground beef before the last steaks are eaten, and we do buy some from the grocery.

I'm really careful with Sushi as I have an unusual food allergy--tuna. I love fish, but for some reason tuna does not agree with me. It seems like so much of Sushi is tuna based so I just avoid it altogether.

And, that is the recipe. Like I said, I modified it slightly because my wife doesn't like peanuts and we both love bell peppers.


Tonight's dinner was simple and low carb: 3 egg omelets with ham, cheese, and peppers. One slice of whole grain wheat toast with butter.


I love omelets and frittatas! Alas, I'm the Lone Ranger at my house.

Sushi, on the other hand, is not my cup of tea. I like my fish cooked.

Last night we had salmon patties, pasta salad and turnip greens. I'm thankful that DD and DH helped me, as I am sick with a lovely case of bronchitis.


Last night for me was not a healthy night. We had homemade pizza. We used a store bought crust, as thin as we could find, and limited myself to just 3 smallish slices.

Today is going to be rough as well as it is our weekly family Sunday brunch. I've heard that today's menu is eggs, bacon, biscuits and gravy, fruit salad (lots of added sugar), and cream cheese dessert. I'm thinking of packing a healthy salad instead, but that would probably start a family squabble if I don't eat their food. Sigh. Maybe I'll just nibble a bit and eat when I get home later.


Boy, do I know the problem of family gatherings! I usually fill my plate with the healthiest thing I can find, and skip the worst offenders if at all possible.

Last night was Tuscan bean soup. Tonight I'm having mashed rutabagas, English peas and roast pork. I have the calories left over for a chocolate mousse, but I may be too under the weather to make it.

They do look tasty! A few ways you could up the nutritional profile: use brown rice instead of white (or do quinoa or barley), reduce the ground beef to a half pound (even my meat-centric DH doesn't miss the meat), and add some black beans. A pressure cooker can make the beans and brown rice more convenient to cook.

Speaking of pressure cookers, I had five minute pasta and sauce tonight. I jazzed up jarred sauce with extra mushrooms, bell peppers and onions, plus a half pound of sausage with fennel seed. We have leftovers in case DD wants to take some in a thermos for her lunch.
