Last night was homemade falafels with whole wheat pita bread and a zippy yogurt sauce I made based on Guy Fieiri's recipe. Everyone complained about the menu until they tried them ... And then they asked why I didn't make more!

DD used ranch dressing instead of the cilantro yogurt dip, but she's one of those unfortunate souls to whom cilantro tastes like dirt.

Tonight will be homemade fettuccine Alfredo -- I cut calories by using canned evaporated milk instead of cream -- and I'll pan roast some carrots, onions and sliced mushrooms.


That sounds delicious, K8sMom2002! Tonight, I'm going out to eat so I am going to review the restaurant's menu beforehand. We'll likely share "small plates." I might log my expected foods ahead of time - and will budget for about 800 kcal. But I'm not going to worry if I go over my daily budget. I'll be careful with my intake for lunch and snacks today and tomorrow as well. But tonight, I'm going to enjoy my meal. :)

We're having guests for dinner, so I'm going with an old faithful recipe: smothered cubed steak and gravy with mashed potatoes and green beans. We'll round it out with sliced tomatoes.

I may try sneaking in some yogurt to cut calories in the potatoes.


How do you make the gravy? Some gravies are not so high in calories when they are more au jus style.

Tonight, I am making a Quick Mushroom Chicken Bake.

1 tbsp oil
1.25 lbs boneless chicken breast halves (or tenders are fine)
2 tsp Spanish smoked paprika
4 oz mushrooms, sliced, raw
1 clove of garlic, minced
1 can (10.5 oz) Cream of Mushroom Soup Healthy Request
¼ cup milk
¼ cup parmesan cheese, grated
¼ tsp black pepper, freshly ground

Preheat to 350F
1. Heat oil in nonstick pan.
2. Sprinkle half of paprika on chicken and saute.
3. Remove chicken and place in 2-quart baking dish.
4. Saute mushrooms and in the last minute, add garlic.
5. Remove and place in baking dish.
6. In a small bowl, mix the mushroom soup, milk, parmesan cheese, and black pepper.
7. Pour the mixture over the chicken and mushrooms.
8. Bake for 30 minutes covered, then remove cover, then bake another 10 minutes.
Makes about 4 servings.

Tip: Great with roasted potatoes or brown rice.
Tip: You can skip sauting the chicken to save prep time - but extend baking time to fully cook the chicken.

I love mushrooms! I have to make my own cream of mushroom soup due to corn (modified food starch, etc.) But I'll have to try this recipe.

My cubed steak and gravy recipe is pretty simple -- but not the healthiest. It's a once a month treat for us.

4 pieces cubed steak
Half an onion, sliced
A clove of garlic, diced fine
Several portobello mushrooms, sliced
Salt and pepper to taste
Flour for dredging
A couple of tablespoons of canola oil
A cup and a half of water

Salt and pepper the meat, and dredge in flour. Set aside, and heat the oil in a deep frying pan or a pressure cooker.

Brown onions and mushrooms in oil.

Dredge meat again, shaking off excess. Move mushrooms and onions to the side, and add meat to pan. Brown on one side, turn and brown on the other. Add garlic, and then add water.

If cooking conventionally, bring to a bubble, then turn down to low and simmer for about 45 minutes. If using a pressure cooker, lock and seal lid, bring to high pressure, turn heat to low and cook for 8 minutes, then do natural release.

If you're using the PC, you can put a steamer basket of chopped red potatoes in with it, and they'll be ready for mashing. You'll need to stir the gravy to combine, and it will seem a bit thin, but it has a marvelous taste.

Like I said, it's not the healthiest dish in the world, but it's a once a month treat. It's one of the five beef dishes we have during a month -- that, beef stroganoff, hamburgers and meatloaf, and roast beef.


Tonight was mac n cheese (homemade, no eggs, no flour, and just a little evaporated milk) and turnip greens.


Tonight was Turkish bean stew ... Tomatoes, navy beans, onions, garlic and a half link of sliced smoked sausage. It makes a big pot full, so we have leftovers!


Tonight was baked ham, creamed squash, turnip greens, dressing (southerners' stuffing served as a casserole), field peas, a yeast roll, and peach dumpling cobbler. Can you tell it's Christmas??

I saved my calories for supper and made sure to get a mile walk in this afternoon, plus I got smaller portions of the calorie dense stuff -- half a roll, a small portion of the dressing, half a serving of the peach cobbler. I squeaked by with a few calories to spare.


Last night was my dad's Christmas supper, a diet disaster! Chicken and dumplings, potato salad, English peas, baked ham and pecan pie.

Tonight was fried chicken, cabbage and oven roasted carrots.

I'm really going to have to up my game to work off such meals!
