Wheat Berry Recipes Topic

I saw a photo of a recipe that was cooked with wheat berries. I can't find it now though.

What are some of your favorite recipes using wheat berries? I'd like to cook something with them. I've never tasted a wheat berry, but, I bet they are good.

I need to learn how to incorporate more whole grains in my food.

Hi Amykee1, I have loved wheat berries in cold salads but I have forgotten to buy them so I haven't had it in a long time. If you want something very tasty, try Ellie Krieger's: http://www.foodnetwork.com/recipes/ellie-krieger/wheat-berry-salad-recipe2.html You can modify that recipe to tweak calories, fat, and protein.

Kathy,
I'm looking at some wheat berries on Amazon.com. Which one do you think I should purchase, between hard red wheat berries or soft white wheat berries? I like crunchy things. I plan on eating the wheat berries both cooked and in a salad, like you suggested.

Hi Amykee1,
My name is Joanna. I am the new Dietitian who will be covering forum on Thursdays.
It is nice to meet you! Congrats on adding more whole grains into your diet. Wheat berries are rich in B vitamins and dietary fiber. They are also quite versatile. You can add them to a chili, cook them and then prepare a salad (see Kathy's link) or cook them and use in place of oatmeal, for a hot breakfast. My understanding is that the hard red berries are preferred for baking a whole wheat bread. While the soft white berries are more tender and are used to make muffins or cakes. Both are acceptable to use in a salad or served hot. Let me know which one you like better. Kathy will return tomorrow if you have additional questions. Be well, Joanna

Ellie Krieger's recipe uses hard wheat berries, so she's using the hard red. And I agree with Joanna re hard red vs. soft.

Thanx Joanna,
Nice to meet you!
